Marmeladen Schleckerei


Wie ihr ja mitbekommen habt, war ich gestern auf dem Markt und habe eine Riesenmenge an Erdbeeren erstanden, die ich dann auch direkt erst einmal in leckere Erdbeer-Rhabarber-Marmelade verwandelt habe. Marmeladen kochen ist wirklich eines meiner liebsten Hobbies: es geht schnell, macht Spaß und ist um ein tausendfaches leckerer als das Zeug aus dem Supermarkt.
As you have noticed, I've been to the farmer's market yesterday and purchased a huge amount of strawberries, which I transformed right on the spot to the tastiest strawberry-rhubarb-jam. Making jam is actually my favourite task: it's pretty fast to make, is a lot of fun and the result tastes so much better than any jam from the grocery store.


Auf dem  Markt gab es allerdings nur diese wunderschönen Erdbeeren, denn die Rhabarbersaison ist eigentlich schon wieder vorbei. Doch im nächsten Supermarkt hatte ich etwas mehr Glück und konnte mir die gefühlt letzten Rhabarberstauden des Jahres sichern.
At the market I could only find these really yummy-looking strawberries, because the season for rhubarb is already over. But in the next supermarket I was lucky to find probably the last rhubarbs of the season.

Zutaten / ingredients

1kg Früchte (ich habe 750gr. Erdbeeren u. 250gr. Rharbaber genommen) / Fruits (I used 750gr. strawberries & 250gr. Rhubarb)
1Tl griebener Ingwer / grated ginger
500gr. 2:1 Gelierzucker / 2:1 preserving sugar



Erst einmal müssen die Früchte natürlich gesäubert und der Rhabarber geschält werden. Dann könnt ihr die Erdbeeren in Hälften oder Viertel teilen (je nach Größe) und den Rhabarber in 1cm große Stücke schneiden. Das alles plus den Ingwer gebt ihr danach in einen großen Kochtopf. Ihr könnt natürlich das Verhältnis von Erdbeeren und Rhabarber so gestalten, wie ihr es gerne mögt, solange am Ende ein Kilo dabei rauskommt.
First you have to clean your fruits and peel the rhubarb. Then you cut the strawbeeries in half or quarters (depends on the size) and the rubarb in pieces of about 1cm. Put all the fruits and the ginger in a big cooking pot and set it on the stove. You can change how much strawberry or rhubarb you want in your jam after your taste, it only has to be 1kg in the end.


Auf dem Herd lässt ihr dann eure Mischung bei mittlerer bis starker Hitze zu einem Mus verköcheln. Immer mal wieder umrühren und keine Sorge mit der Zeit wird es immer mehr zu einem Brei. Das macht ihr solange bis ihr eure gewünschte Konsistenz erreicht habt. Ich mag Marmelade auch gerne mit Stückchen andere vielleicht lieber ohne. Bei letzterem könnt ihr am Ende auch noch einmal mit einem Pürierstab durch den Topf gehen. Als letzten Schritt fügt ihr den Gelierzucker dazu und lasst das Ganze bei starker Hitze ca. 3 Minuten (Packungsanleitung beachten) sprudelnd kochen. Am Schluss macht ihr am Besten eine Gelierprobe, dafür einfach mit einem Teelöffel etwas von eurer Marmelade auf einen Unterteller geben und schauen, ob das Kochgut geliert also fest wird. Wenn alles gut ist, dann gehts ans Einfüllen. Sollte das nicht der Fall sein, lasst das Ganze noch ein wenig länger kochen und nochmal die Probe machen.

Cook the mixture on middle to high high heat until it is a pureé. Stir it now and then and don't worry it will form a pureé eventually. Do this until it has the texture, you want it to have. I like my jam with little fruit pieces in it, but maybe you just like a pureé all the way through. So don't hesitate to use a mixer in the end. Now you have to add the preservating sugar and turn your stove on high heat. The mixture has to bubble up for appr. three minutes. I also use a "Gelierprobe", this means you take a teaspoon of your hot jam, put it onto a saucer and wait if it will stiffen up, when cooling down. If it does stiffen up, you are ready to fill your mason jars. If it doesn't stiffen up, leave it on high heat a little bit more and try again.


Ich erspar euch die Fotos vom Einfüllen, dass ist nämlich ganz schön klebrig und muss schnell gehen. Am Besten funktioniert es mit einer Suppenkelle. Denkt daran, eure Gläser vorher abzukochen, sonst ist eure Marmelade ganz schnell ein beliebter Platz für Schimmelsporen. 
I'm saving you from pictures while filling the glasses, because that's kind of a messy thing to do. But with a dipper it's pretty easy acutally. Think of decocting your mason jar's before filling them, otherwise your jam will be a nice spot for some fungi.
